There is a new book by Andrew Stuart: The Logic of Sudoku. Read more about it here: http://www.sudoku.org.uk/

I've read some reactions on Sudoku forums by readers, describing it as a very comprehensive and complete book.

I can recommend Andrew Stuart's "The Logic of Sudoku" as mentioned above by Ruud. It is very comprehensive and the techniques are well explained. Plenty of sample puzzles to test out your new found knowledge as well.
